Beth obtained a Bachelor’s degree in Nutrition at Benedictine University and subsequently completed a Master’s degree in Nutrition at Ball State University. While working towards het Master’s, she was employed as a graduate assistant in Ball State’s Nutrition Assessment Laboratory with the opportunity to utilize state-of-the-art assessment equipment and provide nutrition counseling to students, faculty, and their families.
