Sushi Tora

Sushi Tora is perhaps one of the best sushi restaurants in Boulder..although not as good as it was in previous years..due primarily to a change in ownership about 14 years ago. One thing that most diners don't appreciate..if they haven't actually eaten at sushi restaurants in Japan..is the scrupulous attention that the Japanese pay to freshness..especially with raw fish.



Sushi Tora used to be that scrupulous with their menu items in the past..but my Japanese relatives feel that because many Americans cannot discriminate freshness on that level (or have something to compare it to)..the new owners have let their quality slip a little. Another problem for many sushi restaurants in the U.S. is that the Japanese work pool is being replaced by Hispanic workers..who have not developed their culinary skills to typical Japanese standards



In any event Sushi Tora's cuisine is perhaps one of the best available in the Colorado area..however for the prices they charge..the more discriminating sushi diner would expect a little more. Whereas my Japanese realtives once felt that Sushi Tora was as good as good sushi restaurants in Japan..they now feel that it is only of average quality by comparison.
